How to cook?
Don't worry, we've got your back. Follow these easy steps to make the best of your fresh curry paste!
1. Prepare your ingredients: chop your choice of meat (chicken, beef, porc or seafood) and vegetables. About 1 cup of meat & veggies per serving is enough! My favorite is with pumpkin, eggplants and bell-peppers!
2. Infuse flavors: heat oil in a pan on medium heat (1tbsp/serving), add the curry paste (1tbsp/serving), and stir until flavors are released. Trust your sense of smell to know when it's ready!
3. Cook the meat (optional): if you're cooking meat, this is when you add it in the pan: stir fried for a couple of minutes until the meat turns golden and is coated with the curry!
4. Create creamy bliss: add the coconut milk (1cup/serving) and stir gently to a soft simmer.
5. Add freshness: incorporate your selection of vegetable of cook gently until soft. Tips: for a more creamy curry, cook on strong heat; for a more soupy curry, cook on low heat.
6. Taste and add seasoning: you can now adjust the flavors to your taste: add coconut milk if it's too spicy; add fish sauce or soy sauce to make it more savory; add a bit of coconut sugar for sweetness. Finally, just before serving you can add some sweet basil leaves and lime wedges.
